This is one of my favorite bread recipes to make whenever I’m wanting something different than the usual whole wheat I make. I think it goes great with soups or with chicken salad. It’s crusty on the outside yet soft on the inside, and the smell as it bakes is just divine. You can definitely make this bread in the traditional manner, but I have a bread machine, which saves me tons of time when I’m busy working. Just add the ingredients, set the machine, and in about 3 hours, you’ll have a delicious loaf of bread that people will think you fussed over.
Mustard Rye Bread
Ingredients for 1-/2 pound loaf
1/14 cups warm water
1/4 cup stone ground mustard
1 tablespoon butter or shortening
2 cups bread flour
1-1/2 cups rye flour
2 tablespoons gluten flour
1 tablespoon brown sugar
1 teaspoon caraway seed
3/4 teaspoon salt
1 teaspoon active dry yeast or bread machine yeast
Ingredients for 2-pound loaf
1-1/2 cups warm water
1/3 cup stone ground mustard
2 tablespoons butter or shortening
2-2/3 cups bread flour
2 cups rye flour
3 tablespoons gluten flour
4 teaspoons brown sugar
1 teaspoon caraway seed
1 teaspoon salt
1-1/4 teaspoon active dry yeast or bread machine yeast
Select loaf size. Add the ingredients to the machine according to the manufacturer’s directions. If available, select the whole grain cycle or select the basic white bread cycle.
