I love to make my own salad dressings. That way you can control the sugar and salt amounts and avoid those preservatives that you can’t pronounce. One of my favorite restaurants has a yummy garlic peppercorn dressing, and I was hoping to try and duplicate those flavors. I think this one comes pretty close. The next time I make it, though, I’m going to add some grated Parmesan to it – I think that will make this delicious dressing even better. I recently bought a Nutribullet, and this little blender is terrific for making quick work of blending homemade dressings and sauces – dump in your ingredients, and you have salad dressing in under a minute. While this is awesome as a salad dressing, it would also be great as a veggie dipping sauce.
While the jar in the photo contains a variety of dressing recipes, this one isn’t on there, so I thought I’d save you the time of squinting to read it š If you’re interested in it, I’m pretty sure I found it on Amazon a few years back.
Creamy Garlic Peppercorn Dressing
2 cloves garlic, minced
1 tablespoon Dijon mustard
3 tablespoons lemon juice
1 teaspoon black peppercorns
1/2 teaspoon salt
3/4 cup olive oil
1 tablespoon mild vinegar (rice wine vinegar or apple cider vinegar)
1/3 cup Greek yogurt
Combine all ingredients in a blender until thoroughly mixed.
Yield: About 1 cup
